Turn an economical cut of stew meat into tender, flavorful kabobs with this easy teriyaki marinade.

Prep Time: 15 minutes, plus several hours to marinate
Cook Time: 8–12 minutes
Serves: 4

Ingredients
*Ingredients available at the farmers’ market
- 1–2 lbs. beef or lamb stew meat*, cut into bite-sized pieces
- ½ cup soy sauce (or tamari for gluten-free)
- ½ cup vegetable or avocado oil
- 2 tablespoons packed dark brown sugar
- 2 tablespoons ketchup
- 3 cloves garlic*, smashed
- 1-inch piece fresh ginger, finely chopped
- A few dashes of black pepper
Instructions
- Whisk together the soy sauce, oil, brown sugar, ketchup, garlic, ginger, and pepper.
- Add the stew meat and toss well to coat. Cover and refrigerate for several hours or overnight.
- Preheat the grill to medium-high heat. Remove the meat from the marinade and thread onto skewers.
- Grill for approximately 8–12 minutes, turning occasionally, until browned and cooked to your preferred doneness. Let rest briefly before serving.
