Teriyaki Lamb Kabobs

Turn an economical cut of stew meat into tender, flavorful kabobs with this easy teriyaki marinade.

Prep Time: 15 minutes, plus several hours to marinate
Cook Time: 8–12 minutes
Serves: 4

Ingredients

*Ingredients available at the farmers’ market

  • 1–2 lbs. beef or lamb stew meat*, cut into bite-sized pieces
  • ½ cup soy sauce (or tamari for gluten-free)
  • ½ cup vegetable or avocado oil
  • 2 tablespoons packed dark brown sugar
  • 2 tablespoons ketchup
  • 3 cloves garlic*, smashed
  • 1-inch piece fresh ginger, finely chopped
  • A few dashes of black pepper

Instructions

  1. Whisk together the soy sauce, oil, brown sugar, ketchup, garlic, ginger, and pepper.
  2. Add the stew meat and toss well to coat. Cover and refrigerate for several hours or overnight.
  3. Preheat the grill to medium-high heat. Remove the meat from the marinade and thread onto skewers. 
  4. Grill for approximately 8–12 minutes, turning occasionally, until browned and cooked to your preferred doneness. Let rest briefly before serving.
