Peach Burrata Salad 

Peach Burrata Salad is a fresh, vibrant summer salad featuring peaches, heirloom tomatoes, burrata, arugula, and basil, finished with hot honey, aged balsamic, and olive oil. 

Adapted from the recipe by Paula Croteau of Boisseaux Cooking School 

Serves 6 to 8

Ingredients

*Ingredients available at the Saratoga Farmers’ Market

  • 2 cups arugula*
  • Pickled red onions*
  • 3 peaches*, cut into slices
  • 3 heirloom tomatoes*, cut into slices
  • 1 cup fresh basil*, torn
  • 2 Burrata balls, torn
  • Hot honey*, to taste
  • Aged balsamic vinegar, drizzled
  • Extra virgin olive oil, drizzled
  • Coarse salt & fresh pepper to taste

Instructions

Place arugula on a serving platter. Top with peaches, tomatoes & pickled red onions. Tear basil and burrata and place on top of salad just before serving. Drizzle with honey, olive oil, vinegar and season with salt & pepper. Toss just before serving.
