Cheeseburger-Stuffed Zucchini Boats

Turn peak-season zucchini into a fun summer dinner with these Cheeseburger-Stuffed Zucchini Boats, filled with seasoned beef and topped with melted cheddar.

Ingredients

  • 1 pound ground beef*
  • ½ cup beef broth*
  • ¼ cup cream cheese
  • 2 tablespoons ketchup
  • 1 teaspoon yellow mustard
  • ½ teaspoon onion powder*
  • ½ teaspoon garlic powder*
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 4 large zucchini*
  • 8 oz. shredded sharp cheddar cheese*, grated or sliced

Instructions

  1. In a large skillet over medium-high heat, cook ground beef, stirring occasionally, until browned, about 7 minutes. Drain the fat and mix in beef broth, cream cheese, ketchup, mustard, onion powder, garlic powder, salt, and pepper. Continue mixing until fully combined. Bring to a boil and reduce heat to low. Let simmer for 5 minutes or until sauce is thickened and cream cheese is melted.
  2. Preheat air fryer to 350°F.
  3. Slice zucchini lengthwise and scoop out the center. Spoon meat mixture into the center of each zucchini and carefully place stuffed zucchini inside the air fryer, with stuffing facing up. Sprinkle cheese over each zucchini boat.
  4. Air fry for 10 minutes, or until zucchini is fork-tender and cheese is melted.
  5. Remove from air fryer and serve.
