Makes 6-8 servings

Ingredients
*Ingredients available at the farmers’ market
- 1 package of pizza dough* (Bakery Suzanne may have some!)
- 1 tablespoon olive oil
- 1 bunch of scallions*, chopped
- 1 tablespoon dill*, chopped
- ½ cup parsley*, chopped
- ½ cup cilantro*, chopped
- Salt and freshly ground pepper
- 2 bunches of spinach* or 1 lb bagged spinach*, chopped
- 2 eggs*, beaten and 1 egg, divided
- 1 cup cottage cheese
- ½ cup chopped roasted red peppers
- ½ cup crumbled feta cheese
- Grated zest of 1 lemon
Instructions
- Remove dough from package and put in floured bowl. Cover and allow to warm up and rise.
- Add 1 tablespoon oil to large skillet. Sautee scallions, herbs and spinach and cook on medium heat about 4 minutes. Drain any residual liquid from pan. Remove from heat and add cheeses, peppers and lemon zest. Taste for salt and pepper and then stir in the eggs.
- Preheat the oven to 375 F. Spread out the dough in a 9×13 glass pan or on a cookie sheet. Spread the filling on the dough, leaving a border of 2 inches. Fold the edges of the dough over the filling and brush with 1 beaten egg white. Bake 25-30 minutes or until set.
