Pan Roasted Pork Chops with Caramelized Onion, Apple, & Maple Dijon Jam over Mashed Potatoes and Braised Greens

Ingredients

Pork Chops*

Potatoes*

Greens*

Celery, Carrot, Onion*

Butter

Heavy Cream

Chicken ( or Vegetable) Broth

Seasoning

Sea Salt, Black Pepper, Fresh Rosemary*

Pork Chops

Season with salt, pepper, and rosemary*, and pan Sear the Pork Chops on both sides and finish in the oven at 350 degrees until medium/med well (about 10-15 minutes)

Apple – Onion – Dijon Jam

Small dice and caramelize the onions* with a little salt & pepper on low heat stirring occasionally to scrape up the goodies at the bottom of the pan. Keep going until the onions are golden brown and sweet to the taste.  Add diced apples* (same size as the onions) to the pan and cook until the apples are soft. Add in a tablespoon or so of mustard (any kind you like, just not yellow) and about 2tbsp of maple syrup.  Cook all of it together until it reaches a chunky/ saucy mixture that is to your liking.

Mashed Potatoes

Cut Yukon gold potatoes into large chunks, and boil until soft all the way through. Strain and let rest until dry. Then back in the pot.  Butter ( mo butta, mo betta ) and heavy cream, salt & pepper to taste.  Whip until smooth & creamy & delicious.

Braised Greens

Small dice celery*, carrot*, onion*, sauté in a pan with oil, or butter, salt & pepper.  Thin slice the greens*, add them to the pan., and sauté until soft.  Add chicken ( or vegetable ) broth, and let the greens simmer slowly in the broth until it reduces almost all the way down.  Add a splash of apple cider vinegar* to finish.
