Ingredients
* In-season and available at the Saratoga Farmers’ Market
- 3 cups tomato juice or V8 juice (Phyllis prefers V8)
- 4 large tomatoes*, chopped
- 1 green pepper*, chopped
- 1 seedless cucumber*, chopped
- 1 cup chopped celery*
- 1/2 cup chopped green onions*
- 3 tbsp red wine vinegar
- 1 tbsp olive oil
- 1 tbsp fresh parsley*
- 1-2 tsp salt
- 1 clove garlic*, minced
- Fresh pepper
Instructions
Combine all ingredients in a large bowl and chill thoroughly before serving.
