Farm-Fresh Gazpacho

Beat the heat with this flavorful farm-fresh gazpacho from Phyllis Underwood at Shushan Valley Hydro Farm.

Ingredients

* In-season and available at the Saratoga Farmers’ Market

  • 3 cups tomato juice or V8 juice (Phyllis prefers V8)
  • 4 large tomatoes*, chopped
  • 1 green pepper*, chopped
  • 1 seedless cucumber*, chopped
  • 1 cup chopped celery*
  • 1/2 cup chopped green onions*
  • 3 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley*
  • 1-2 tsp salt
  • 1 clove garlic*, minced
  • Fresh pepper

Instructions

Combine all ingredients in a large bowl and chill thoroughly before serving.
