Recipes to Celebrate the Sweetness of Strawberry Season

Strawberry Preserves

A simple recipe (pectin free!) that is divine on English muffins.

Ingredients

  • 1 lb fresh, local strawberries*, hulled and quartered
  • 1 cup sugar
  • 1 TBS lemon juice

Instructions

Place strawberries in a wide, thick bottomed stainless steel, copper or ceramic skillet. Turn the burner on to high heat, stirring constantly to prevent scorching. The strawberries should release their juices and come to a boil quickly.  Boil for 5 minutes, then add the sugar and lemon juice.  Boil on high heat for another 5 minutes, stirring nearly constantly. The preserves should be well thickened. Pour into sterile ½ pint jars, screw lid on, and cool. Store in the fridge or freezer.

Strawberry, Watermelon, Mint Cooler

This refreshing drink is perfect for a hot day!

Ingredients

  • 4 cups chopped watermelon
  • 1 cup frozen strawberries*
  • 6 mint leaves*
  • 1 lime, juiced

Instructions

Combine all ingredients in a blender and blend on high until smooth.

Strawberry Salsa

Delicious on tacos or salads.

Ingredients

  • 1 quart of strawberries*
  • 1 bunch of cilantro*, chopped
  • 1 bunch of scallions or spring onions*, chopped
  • 1 jalapeno or pepper of choice (optional)
  • 1 lime, juiced
  • ½ tsp sea salt

Instructions

Finely dice strawberries. Gently mix with the remaining ingredients. Add more salt or lime to taste. Serve with organic tortilla chips.
