Market Fresh Tacos: Ingredients
* Ingredients currently available at the farmers’ market.
- 1 lb of ground beef*
- 1 tablespoon canola oil
- 2-3 tablespoons taco seasoning*
- 3-4 scallions*, chopped
- 1 bunch cilantro*, chopped
- 1 avocado, chopped
- 1 lime, quartered
- 4-5 radishes*, thinly sliced
- 1-2 cups chopped lettuce*
- 1 cup cheddar*, grated
- ½ cup sour cream, optional
- Salsa* and hot sauce*, to taste
- Corn or flour tortillas, soft or hard
Instructions
In a skillet over medium heat, warm the canola oil. Add the ground beef and cook until fully browned, breaking it apart with a spoon as it cooks. Drain excess fat if necessary. Stir in the taco seasoning along with ¼ cup water and simmer for a few minutes until the meat is evenly coated and flavorful.
While the beef cooks, prepare the toppings. Chop the scallions and cilantro, slice the radishes, shred the lettuce, dice the avocado, and grate the cheddar cheese. Arrange everything on a large platter or serving board so everyone can build their own tacos.
Warm soft tortillas wrapped in foil in a 325°F oven for 10–15 minutes. If using hard taco shells, place them on a baking sheet and warm for 3–7 minutes until crisp.
Fill tortillas with seasoned beef and top with your favorite combinations of fresh vegetables, cheese, salsa, sour cream, cilantro, and a squeeze of lime. Serve immediately and enjoy a fresh, colorful meal inspired by local market ingredients.
