Ramp Pesto

Ramp season is almost over — don’t miss the chance to enjoy this spring favorite while it lasts. Ramp pesto gives a flavor boost to pasta, pizza, spring vegetables, eggs, and more!

Ingredients

*Ingredients available at the farmers’ market

  • 2 cups ramp leaves*
  • ½ cup walnuts
  • ½ cup olive oil*
  • ½ cup parmesan cheese
  • 1 tbsp lemon juice
  • 1 tsp Himalayan salt

Ingredients

  1. Prepare the ramps by washing off any remaining dirt.
  2. In a food processor, combine all ingredients and pulse or blend until desired consistency is
    reached. It should be creamy. Serve with spring veggies, on pizza, with pasta or your
    favorite sandwich.
