Spinach and Herb Galette

Adapted from Vegetarian Cooking for Everyone by Deborah Madison
Makes 6-8 servings
Prep time: 1hr, including dough rise
Cook time: 30 min

Ingredients

*Ingredients available at the farmers’ market

  • 1 package of pizza dough* (Bakery Suzanne may have some!)
  • 1 tablespoon olive oil
  • 1 bunch of scallions*, chopped
  • 1 tablespoon dill*, chopped 
  • ½ cup parsley*, chopped
  • ½ cup cilantro*, chopped
  • Salt and freshly ground pepper
  • 2 bunches of spinach* or 1 lb bagged spinach*, chopped
  • 2 eggs*, beaten and 1 egg, divided
  • 1 cup cottage cheese
  • ½ cup chopped roasted red peppers
  • ½ cup crumbled feta cheese
  • Grated zest of 1 lemon

Instructions

  1. Remove dough from package and put in floured bowl. Cover and allow to warm up and rise.
  2. Add 1 tablespoon oil to large skillet. Sautee scallions, herbs and spinach and cook on medium heat about 4 minutes. Drain any residual liquid from pan. Remove from heat and add cheeses, peppers and lemon zest. Taste for salt and pepper and then stir in the eggs. 
  3. Preheat the oven to 375 F. Spread out the dough in a 9×13 glass pan or on a cookie sheet. Spread the filling on the dough, leaving a border of 2 inches. Fold the edges of the dough over the filling and brush with 1 beaten egg white. Bake 25-30 minutes or until set.
