Ingredients
Ingredients currently available at the farmers’ market
● 8 pasture raised eggs*
● 1 ¾ cup milk*
● 2 cups whole wheat einkorn flour
● 1 tsp Himalayan salt
● 2 tsp coconut sugar
● 2 tsp cinnamon*
● 1 tsp pumpkin spice*
● 1 tsp vanilla extract*
● 4 tbsp maple syrup*
● 5 tbsp grass fed butter (for skillet)
● Optional: fresh berries or preserves* for topping
Instructions
- Preheat the oven to 425 degrees. Preheat the cast iron skillet in the oven.
- In a blender combine all the ingredients – eggs, milk, flour, salt, coconut sugar, cinnamon,
vanilla, maple syrup. - Once that oven is preheated, remove the cast iron skillet (carefully with mitts), add the butter
and then pour the mixture into the skillet. - Bake at 425 for 15 min until golden on top. Slice like a pie, sprinkle with powdered sugar
(strictly aesthetic) and top with fresh berries or preserves!
