Einkorn Dutch Baby Pancake Recipe

Ingredients
Ingredients currently available at the farmers’ market

8 pasture raised eggs*
● 1 ¾ cup milk*
● 2 cups whole wheat einkorn flour
● 1 tsp Himalayan salt
● 2 tsp coconut sugar
● 2 tsp cinnamon*
● 1 tsp pumpkin spice*
● 1 tsp vanilla extract*
● 4 tbsp maple syrup*
● 5 tbsp grass fed butter (for skillet)
● Optional: fresh berries or preserves* for topping


Instructions

  1. Preheat the oven to 425 degrees. Preheat the cast iron skillet in the oven.
  2. In a blender combine all the ingredients – eggs, milk, flour, salt, coconut sugar, cinnamon,
    vanilla, maple syrup.
  3. Once that oven is preheated, remove the cast iron skillet (carefully with mitts), add the butter
    and then pour the mixture into the skillet.
  4. Bake at 425 for 15 min until golden on top. Slice like a pie, sprinkle with powdered sugar
    (strictly aesthetic) and top with fresh berries or preserves!
