Nasturtium Salad

Adapted from the recipe by ‘Cooking with Kimberly’
Makes 2-3 servings
Prep time: 10 minutes

Ingredients
*Ingredients available at the Saratoga Farmers’ Market

● 8–10 nasturtium flowers*
● 1 large cucumber*
● 1 large tomato*
● 6 – 8 peppercorns, ground
● Sea salt
● 1 1/2 tsp pear vinegar
● Extra virgin olive oil

Instructions

Wash the flowers, leaves, and vegetables before preparation.

Prepare the cucumber by peeling slices lengthwise, alternating peel and no peel strips (or roll the slices for a beautiful display).

Slice the tomatoes.

Place the cucumbers and tomatoes onto a platter along with the flowers and leaves of the nasturtium.

Mix the pepper, salt, pear vinegar, and olive oil and drizzle additional olive oil over the top of the salad.

Optional add-ins: Hard-boiled eggs*, walnuts, or finely grated parmesan cheese to the top of the salad.
