Curry Coleslaw Dressing

Many of the vegetables available in the autumn and winter market work well in coleslaw. This slightly sweet coleslaw dressing, seasoned with a bit of curry and celery seed, has a fantastic flavor that complements many fall dishes, from roast pork to stewed chicken.

Use this dressing with any combination of shredded vegetables, such as cabbage, kohlrabi, and/or carrots, all of which are available at the market. Add a bit of chopped onion or scallions if you like.

The dressing makes roughly 2 cups, which easily dresses 4-6 cups of slaw, though you should adjust the exact proportions to suit your own taste.

 

Ingredients

*Ingredients are available at the market. 

½ cup lemon juice or cider vinegar*

¾  cup plain yogurt*

¾ cup mayonnaise

½ cup sugar

½ tsp curry

1 tsp celery seed

 

Directions

Combine all ingredients and blend well. Pour over shredded or finely chopped vegetables, and allow to sit for 15-20 minutes before serving, or refrigerate until ready to serve.
